Southwest Quinoa Salad

Looking for a quick an easy meal that you can make and store for up to a week? This quinoa salad is packed with protein, vegan and is very similar to the black bean and quinoa salad that you can buy at Whole Foods in the prepared foods section. Southwest Quinoa Salad

Ingredients:

  • 1 cup raw quinoa cooked
  • 1 16 oz  can of black beans
  • 1 16 oz can of yellow corn
  • 1/2 cup diced cilantro
  • 4 diced green onions
  • 1/3 cup olive oil
  • 1 teaspoon cumin
  • salt and pepper to taste

Rinse the quinoa and cook 1 cup. While it is cooking combine the black beans, yellow corn, diced cilantro and green onions in a bowl. Combine the olive oil, cumin and salt and pepper to taste in another small bowl. When the quinoa is finally cooked add in the black bean mixture and dress with olive oil dressing. Serve chilled.
